Sourdough Buckwheat Pancakes

Night before

  • 1 c buckwheat flour
  • 1/2 c all purpose flour
  • 1 c sourdough starter
  • 1 c water

Morning of

  • 1/3 c yoghurt or milk
  • 2 tbsp. honey
  • 2 tbsp. canola oil
  • 1 egg
  • 1 tsp. baking soda
  • 1 tsp. salt
  • butter for cooking


Night before

  1. The night before you want to eat these pancakes for breakfast mix together the flours, sourdough starter and water. Cover with a lid and leave in a warm place overnight.

Morning of

  1. Your mixture from the night before should have bubbles on the surface and smell strongly of sourdough. Add the remaining ingredients and mix until just combined.
  2. On a preheated griddle greased with butter ladle the batter, wait until the edges start to dry and bubbles come to the surface, flip and cook the other side until golden brown. Serve immediately for best results.

  • Finally found the buckwheat sourdough that I remember from an old boyfriend’s father–he used to make them every Sunday morning., solidifying my lifelong love of buckwheat. My daughter gave me some sourdough starter recently: gluten-free for her diet, and I’ve been halfheartedly nurturing it and experimenting with a whole wheat batch also to see if the gluten would improve it. The gluten-free seems heartier, maybe because it’s more like the white flour typically used in sourdough. Last night I wanted to start a batch of buckwheat pancake sourdough, but none of the recipes I found fit my aim, so I compiled one. It was okay, but now I find this one that looks perfect–overnight, simple, minimal eggs in the morning, which I’ll use ground flax seed for instead. Thank you–I can’t wait to try this.
